These were our sad faces because the Texans were losing. I'm more of a Packer fan anyway but they lost too :(
I decided to make slow roasted pork ribs for dinner, absolutely delicious!
First I took the ribs and cut that membrane off that's on the bone side. It's an important step because it is very tough to chew thru and makes the ribs extra tender and gets the flavor into the meat.
I made a rub of 3/4 cup of brown sugar, 1 tbl of Paprika, 1tbl of Garlic Seasoning, and a couple of pinches of Cayenne. Then spread half on the bone side and flipped it over and spread the rest on the meaty side.
I used 2 sheets of foil on the bottom and put 2 sheets on top then crimped the edges up till it was sealed closed. Then put it on a sheet pan and in the oven at 300° for 2 1/2 hours. Then cut into 2 rib pieces, slathered a BBQ sauce on the bone side up part and put it under the broiler for 5 mins, flipped each piece and slathered the meaty side with BBQ sauce and broiled it till it caramalized.
I also took some fingerling potatoes and a few slices of Black Forrest Bacon cut in half. Sprayed the potatoes with olive oil, sprinkled garlic seasoning on them, and wrapped them in the bacon halves.
I put them in the oven above the ribs when there was half an hour left, then cranked up the oven while I was cutting and slathering the BBQ on the ribs. Cooked them for the 30 mins, then on high and broiled for like 10 mins till the bacon browned. I made a dipping sauce with sour cream, chopped fresh chives, and garlic seasoning.
And the last side dish was corn on the cob. I filled a pot with water, added half a stick of butter, some maple syrup, a little bit of molasses, and salt. Let that boil for 30 mins and put it under the boiler with the ribs. Then sprinkled with cayenne at the end. Sweet and spicy!
For dessert I decided to make some fried hand pies. I started with 3 cups of all purpose flour, 3 tbls of sugar, 1/4 tsp of salt. Then cut half a cup of vegetable shortening into the bowl.
Mixed in one beaten Egg.
Then stirred in 1 cup of buttermilk.
Stirred that till it formed a ball and put the ball into a bag and put it into the fridge for a couple hours while the ribs cooked. After dinner I took the dough out and rolled it onto the floured countertop. Used a pizza cutter to even it out in a rectangle and slice into 12 even rectangles.
Then I used a can of strawberry pie filling and apple pie filling and put a dollop onto one half of each rectangle.
Then I took a piece of cream cheese and topped each dollop and sprinkled some cinnamon onto the apple dollops.
In a bowl I beat another egg and used a brush to brush the edges of each rectangle.
Then I folded each rectangle and pressed all of the air out.Then used a fork to crimp the edges closed.
The strawberry ones came out a little but it didn't matter. I then used a Dutch oven to heat up some vegetable shortening to 350° and put in 3 pies at a time, frying till they were golden about 5 mins each. Then put them onto a sheet pan with paper towels.
Waited till they cooled a bit and sprinkled with powdered sugar.
Soooooo yummy! The strawberry ones were my favorite :) I love strawberry and cream!
That was our Sunday night, eating that meal and watching the finale of Dexter and Breaking Bad. Not a bad night at all!
