Breakfast Pizza

Easy recipe and oh so yummy!

First I took a homemade pizza dough that I will post separately. Spread it onto a pizza pan. Topped it with a package of diced potatoes and onions that you can get in the grocery store. I cooked them in a pan and then spread them into the dough. You could also use the shredded potato version if you want! Then I cooked 4 pieces of bacon till they were all the way cooked but close. They will cook more in the oven. Then I chopped it up and spread it over the potatoes.
I then sprinkled some cheddar and Monterey cheese crumbles but you can use any kind of cheese you want.
Then I had caramalized some onions and mushrooms then put that on top. Next time though I would put the onions on the bottom before the potatoes cause they burned a bit in the 500° oven!
Before putting it in the oven I then cracked 2 eggs into little divots I made. Not too close to the side so it won't pour off.
I put it in at 500° for 15 minutes will the dough was browned and crunchy and the eggs were set. I like a runny yolk but if you don't cook it for longer. Keep an eye on it so nothing burns like my onions did.
Just amazing!

Different cheese would be awesome too! And the shredded potatoes. Add whatever you like to this. It's so easy!

Mahli's Healthy Southwestern Corn Chowder

Hey guys sorry I haven't posted in a while. I've been trying to focus all my time on Zara and just haven't had a chance to post my recipes. I have a bunch though so I will try putting them all in this week!

This recipe goes out to a special little girl named Mahli who wants to eat healthy and loves to cook with her mommy!! 

First start with 1 carrot cut in half lengthwise and sliced into thin half moons. I didn't even peel it, just scrubbed in water. Then take a baking potatoe, peel then dice it into bite size pieces. And take half a small onion and dice it small.
In a medium sauce pan or small Dutch oven like I used that has a lid, put in a tablespoon of butter and throw in the onions at medium heat.
After a minute throw in the carrot, 1/2 a tsp of chili powder, and 1/2 a tsp of oregano. Then add a pinch of salt and some pepper.
Once that softens after like 2-3 minutes put in the potatoe and 1 10 ounce bag of frozen corn.
Thenpour in one can of low sodium chicken broth or 2 cups of any chicken broth.
Add 1 cup of milk (1%,2%, whole, or cream which is what I used, if you use cream you only need 1/2 a cup)
Stir then bring to a boil, put down to a simmer and cover. Let it cook for 15-20 minutes until the potatoes are cooked through.
Then taste to see if you need any extra salt. Put in a bowl and top with your favorite toppings. I put in diced avocado, cilantro, and crumbled queso fresco. My husband likes sour cream and shredded sharp cheddar! This was delicious and a meatless meal but you could easily add some shredded chicken from a rotisserie chicken in the last 5 minutes to warm through.

Thai Chicken Quinoa

This recipe is seriously the bomb!! It's healthy but still has great flavor!! I'm so in love with quinoa that any chance I get to use it I will! 

First I made the sauce in a large bowl. I put in a teaspoon of creamy peanut butter and microwaved it for 10 seconds to get it to whisk easier.Then I put in 2 tbls of a Thai Sweet Red Chili Sauce. Love this stuff!
1 tbls of rice wine vinegar
1 tbls of coconut milk
1 tsp of brown sugar
The juice of half a lime
Whisked together
Then I chopped 2 carrots and 2 green onions.
Then added that to the bowl with 1 roasted chicken breast diced and 1 cup of cooked quinoa which is half a cup of uncooked quinoa.
I mixed this together then plated and topped with some toasted sliced almonds. Soooo yummy!!

Chicken and Dumplings with Sautéed Oyster Mushrooms and Sweet Carrots

This is a super easy and super delicious meal that tastes slow cooked but comes together in 30 minutes or less!

To make the dumplings I first put in a bowl 2 cups of flour. Then added 1 tablespoon of baking powder. And 1 1/4 tsp of salt.Then poured in 1 cup of milk plus 2 tbls into the flour.
I mixed it with a wooden spoon till it came together in a ball.
There is no kneading in this recipe! Which is what makes it so easy. Next I dumped the ball onto a floured surface and sprinkled the top with flour so it wouldn't stick to the rolling pin.
Then I rolled it out to a rectangle about half an inch.
Then using a pizza cutter I did a grid to cut them into half inch squares.
In a large Dutch oven I had 6 cups of chicken stock brought to a boil. Then added the dumplings. The extra flour will thicken it up and flavor it. I brought it back to simmer and let them float for 20-30 minutes dunking them with a spoon every few minutes.
While that cooked I shredded an entire rotisserie chicken and after the dumplings were cooked I dropped the meat in and let heat through.
And that's it! It's done! It taste like homemade and slow cooked but takes 20-30 minutes. For sides I sautéed some yellow oyster mushrooms in a tbls of butter.
Then peeled and sliced some carrots and put them in a pan with some water and cooked with a close lid for about 10 minutes till softened the added some butter, honey, and brown sugar.
Then plated them all together! Yum!!

Beef Chili Mac and Cheese

This was super easy to make. I just chopped up half a large onion and sautéed in a Dutch oven with olive oil till softened.Then threw in 1lbs of ground beef.
Browned that then lined up the rest of the ingredients. 1 can of diced tomatoes with chili seasoning, 1 can of chili beans, 1 can of diced tomatoes with seasonings you like, 1 can of bush's grillin beans (I got Texas ranchero flavor for a unique taste) and 2 cans of chicken broth plus 1 can of water.
Wheb it was browned I added 2 cloves of garlic chopped and sautéed for 1 minute.
Added 2 tsp of cumin
2 tbls of chili powder
Make a hole to toast the 1 tsp of tomato paste and cook the raw taste out.
Then pour in the line of ingredients. And then a box of macaroni. I used the 1 serving of veggie pasta for more nutrition.
Brought to a boil then simmered for 20 minutes. Then I put in 3 cups of shredded sharp cheddar.
Topped with more cheese, sour cream, and chopped parsley.
Yum!

Nacho Stuffed Chicken with Refried Beans and Corn

For the stuffing inside the chicken I put in a bowl 1 tbls of diced green chilies from a can and chopped them up more, 1/4 teaspoon chili powder, 1/2 teaspoon ground cumin, 1 ounce grated cheddar cheese, 2 ounces grated Monterey jack cheese. 1/3 cup sour cream, 1 green onion, thinly sliced, 2 tablespoons chopped fresh parsley, and Salt and freshly ground black pepper. I mixed that together and put in the fridge to meld.Then I put 4 chicken breast halves on a cutting board to stuff.
I put the filling in a small plastic baggie.
Cut the tip off the bag then made a hole in the chicken breast by poking a long sharp knife into the thick part and wiggling it to make a pocket. Then put the tip of the Baggie in and squeezed. Squishing the ingredients around in the bag before snipping, getting it warmed and more squeezable helps. Put 1/4 of the stuffing in each chicken breast half.
Then I rolled each piece if chicken in some flour.
Into a shallow dish with 2 eggs scrambled.
Then into a shallow dish that I filled with tortilla crumbs into. I just put 6 cups into a bag and smashed them till they were small pieces. And seasoned them with some taco seasoning.
Then laid the chicken in about half an inch of veggie oil set at medium heat. You want to slowly fry them so the chicken cooks and the tortilla chips don't burn.
I cooked them for about 8 minutes a side then put them in the oven at 350° for 12 minutes to finish.
Then plated! Delicious! I served mine with hot sauce. But salsa would taste just as good and maybe sour cream too!
