Chinese Chicken Salad with Fried Wantons and Toasted Almonds, topped with a Sesame Dressing.

This dressing is so yummy! It's my new favorite! First I put in 1 1/2 tablespoon of vegetable oil.6 tablespoons of seasoned rice vinegar, mine was a roasted garlic flavor.
1 1/2 tsp of sugar
1 tsp of sesame oil
1 tbls of soy sauce
2 tbls of sesame seeds
1/4 a tsp of salt and some ground black pepper to taste. Whisk then let sit in the fridge and meld,

To make the crispy wantons I took 10 square wantons and cut them into strips. Next time u would do thinner ones but they still tasted great!
I put 2 tbls of vegetable oil on medium high heat. Dropped in the wanton strips and let cook a couple mins each side, when they are golden brown I took them out.
And put on a paper towel to drain.
I toasted 1/3 a cup of sliced almonds

For the chicken I baked it. I put 2 chicken breasts on a foil covered pan and sprinkled them with 1/2 teaspoon kosher salt, 1/4 teaspoon Freshly ground black pepper, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon dried oregano, and 1/4 teaspoon paprika
Then baked for 10 minutes on one side and 10 on the other side at 450° then let rest before slicing to serve. I also boiled some mini pasta to top the salad with too! It was so yummy!!

Crunchy Honey Garlic Pork Chops with Broccoli Gratin, and Maple Crown Carrots


For this gratin it only makes enough for like 4 people. I first put in 2 tbls of butter.
When that was melted I whisked in 2 tbls of flour.
Whisked till combined and toasty smelling. Then slowly poured in a cup of milk while whisking.
Let it thicken up a bit and grated in some nutmeg, added a pinch of salt and some black pepper.
In a baking dish I put in 2 heads of broccoli cut into florets. Put that in the microwave with a little bit of water and a damp paper towel for 5 minutes. Then grated 2 oz of pepper jack cheese.
2 oz of sharp cheddar.
Poured the white sauce evenly over it. And topped with 2 oz more of each cheese. You could use any cheese here. This is what I had. Gruyere cheese would be amazing!
In a bowl I melted 1 tbls of butter then poured in half a cup of Panko bread crumbs. Mixed then topped the broccoli and cheese with it.
Then baked at 400° for 20 minutes till browned and bubbly!
Yum!


For the sauce to pour over the pork I started with 4 garlic cloves chopped and put in a small sauce pan with a little olive oil at medium low heat. Don't burn the garlic, it tastes awful if you do.
Then I added 2-3 tbls of soy sauce.
3/4 a cup of honey, and let this simmer over medium low heat. Careful cause the honey can bubble up.

Cut the carrots and put them in pan with a little water and boiled them covered till they are softened. 10 minutes.
Took the lid off and poured in a tbls of maple crown.
Then a tbls of butter and a pinch of salt. Sauté that together and then keep warm.

To make the breading for the pork I took a cup of flour. Grated in some nutmeg.
1/2 a tsp of powdered ginger
1/2 a tsp of paprika, thyme, onion salt, garlic powder, and 1/8 a tsp of cayenne 
Mixed then dipped the pork chop in.
Dipped in 2 eggs scrambled.
Then back in the flour mixture.
Put half an inch of veggie oil in a medium high skillet. Then slowly fry the chops till browned on each side. Took about 8 mins each side.
Put them on a rack to dry and keep crispy.
When ready to serve pour the honey garlic soy mixture over top. Do it right before ready to eat so the chops stay crunchy!
Then plate the rest.
Just delicious!!

Homemade Corn Dogs, Cheese Curds, and Funnel Cake!

To make this batter I've been trying and failing the last few times. I think I finally have it down! 3 cups of krusteaz buttermilk pancake mix and 1 cup of yellow corn meal.1 scrambled egg
And 2 cups of water!!
Mix but not too much, then pour in a tall cup.
I have kabob sticks that I have to cut to fit in the pot. Then I insert them 3/4 of the way in a hot dog.
Roll the hot dogs in a little flour to make the batter stick. Be sure to bring the hot dogs to room temp, also a tip to keep the batter on. Then dip into the batter.
Wiggle the stick in a circle to cover the whole hot dog and a little in the stick. That little crunchy part on the stick is my husbands favorite part! Haha.
Pull out and let drip and push the tip back in to flatten the top.
Slowly drop into the hot oil. I put mine at 350°
Then let it drain on a rack

For the cheese curds I put in a bowl 1 cup of flour and 2 eggs.
3/4 a cup of beer
1/4 a cup of milk then whisked together.
Put flour over the cheese curds so the batter would stick
Dropped them into the beer batter and with a fork I coated them, then dropped them into the oil at 350° for a couple minutes. Some of the cheese ran out so I think next time I would freeze the curds so they wouldn't melt as fast.
Delicious!


For the funnel cakes I combined 2 cups milk, 1 egg, 1 tsp of vanilla in a large bowl. In a separate bowl, I put 2 cups of  flour, salt, 1 tsp baking soda and 1 tbls of sugar and gradually added it to the wet ingredients. I beat with a mixer until it was smooth then added 4 tbls of melted butter and put that in a squeeze bottle.
Put the oil temp at 350° and poured the batter in squiggling to make a funnel cake pattern.
Then sprinkled with powder sugar while still warm!
So good!!
