Baked Cod Fish Tacos topped with Cabbage and Avocado with Homemade Corn Tortillas with a Caramelized Corn, Black Bean, Avocado, and Tomato Salad

Here is a dinner I didn't have time to take pictures of. It was a marinated Country fried Chicken and Eggs! So good! I'll have to make another post on how to make it when I try it again.
This one too! It was a pan seared chicken cutler with a mushroom orecchiette and garlic zucchini and squash.


For dinner a couple weeks ago I made a delicious baked cod taco dish!
First I put in a pinch of paprika lemon and lime seasoning I got from the store the other day. It's very good.Then I zested 1 lime
Put in the juice of that lime and grated in 1 garlic clove.
Poured about 1/4 cup of olive oil.
Pit in 1 large filet of cod sliced into pieces. Put on a pan with foil and baked in oven for 20 minutes and 400°


For the slaw I sliced up half a head of romain.
In a bowl I put in 1 tbs of honey. A splash of white wine vinegar, 1 lemon juiced and 2 tbs of olive oil.
Salt and pepper then mixed in the slaw.

For the Corn and black bean salad I first grilled 4 ears of corn until charred and cooked. Then cut them off into a bowl.
Mmmmm look at all that yummy char!
Then I added half a container of cherry tomatoes sliced in half, and a can of drained and rinsed black beans.
Then I added 2 tbs of red wine vinegar
Some honey and olive oil 
The juice of half a lime
Then cubed an avocado into it and mixed.


For the homemade corn tortillas I put 2 cups of masa in a bowl and added 1 1/2 cup of water. Mixed then pinched off little balls. Put in the tortilla press between 2 sheets of waxed paper.
Flattened then separated the sheets carefully.
Popped on a dry hot iron skillet for 3 minutes till browned and bubbly.


Then I added the fish, slaw, sliced red onions, and sliced avocado.
Delicious!!

Hawaiian BBQ Chicken topped Twice Baked Sweet Potato.

For dinner last Monday I made a Hawaiian BBQ Chicken topped Twice Baked Sweet Potato! It was so good and my husband loved it! 

First I chopped up 2 pieces of bacon and added a strip extra for my husband :)
Once crispy I took out the bacon with a slotted spoon onto a paper towel. I poured out some of the fat. Then chopped a small onion and threw in the bacon fat.
Once softened I threw in some Pineapple chunks from a can. Seared them.
Then added 1/3 a cup of BBQ sauce. I picked Sweet Baby Ray's
Then I added some of the pineapple juice.
Once I stirred that, I brought to a boil then simmered till I liked the thickness. And put in two breasts from a rotisserie chicken shredded.
I hollowed out 2 Baked Sweet Potatoes.
Put the pulp in a bowl with 1/4 a cup of cream, 2 tbls brown sugar, 2 tbls of butter, and a pinch of salt.
Filled the Sweet Potatoes back with the filling.
Then topped with shredded Sharp Cheddar and the BBQ Chicken mixture. And put in the oven at 400° for 15 minutes.
Then topped with the Bacon Pieces.

Israeli Couscous with Lemon, Chicken, and Peas.

We went grocery shopping to prepare for the week! I love taking her out to show her off. Everyone has to stop and say how cute she is!In order to not get the "He is so cute" remark I try and put a bow on her when I'm dressing her boyish!! She is too cute to look like a boy :)
She threw up all over this outfit before I could get any better pictures.
I came home from date night to feeding this precious girl and all she wanted to do was play with my teeth!!




For lunch this week I made this amazing dish! I LOVE LOVE LOVE it!!! Leftovers were yummy!
First I took a cup of Israeli Couscous and put it in a pan of 1 tbls of oil heated at medium high heat to toast.
Once toasted I added a can of chicken stock which is 2 cups. I actually put 3/4 of a can but then it needed the rest toward the end.
Bring to a boil for about 10 minutes.
Once water is all gone and the pearls are soft add the juice and zest of 1 lemon.
A cup of frozen peas.
3 tbls of grated Parmesan. Salt and Pepper.
Like 1 cup of chopped chicken, I used the dark meat and underside of the rotisserie chicken. I had used the breasts for another recipe. 
Stirred to meld together, once the peas are cooked through serve with a sprinkling of Parmesan.

Chipotle Grilled BBQ Pork Loin stuffed with bacon and mushrooms and a Sweet Potato Hash.

My husband and I went out to a fancy dinner downtown. They didn't tell me when I made the reservations that there was a wedding going on at the restaurant  and that we would be the only ones eating there!! Still fun anywhere with my amazing husband.

For dinner last Thursday, I swear I'm going to get caught up soon, I made this delicious stuffed pork tenderloin.

First I sautéed 2 slices of bacon chopped into lardons.
Once crispy I added a package of mushrooms that I sliced thin.
After a few minutes I added 2 cloves of garlic chopped.
Sautéedfor a minute more then added a tbls of Panko bread crumbs and half a tbls of chopped thyme. Then added some cracked pepper.
I took a tenderloin that was marinated in chipotle and BBQ spices from the grocery store. Sliced into it and opened like a book. Flattening it out and giving as much surface as possible.
I put some plastic wrap over it and pounded it flat.
Then layered the cooled bacon/mushroom mixture on top.
Rolled it up like a pinwheel and used 8 water soaked toothpicks to keep it closed.
I grilled each side till charred and crispy. Then put it in the oven at 350° for 10 minutes to cook inside.
Then set it on the counter to rest for 10 minutes before I sliced between each toothpick to show the bacon/mushroom swirl inside.
For the hash I chopped half of a small onion and fried it in 2 tbls of veggie oil.
Shredded 2 peeled sweet potatoes and added a pinch of salt and pepper.
Put them in the pan with the onions after they softened a bit and fried for 15 minutes flipping occasionally to get a golden crust. 
Then plated with the sliced pork loin. 
Sooooo yummy!
